
Jam Popsicles
To make jam pops, you need 2 things: a popsicle base and a jam. From there, the sky's the limit.The base: I chose coconut milk for the base here, but you could use yogurt, milk, pudding, or fruit juice. If using a thicker base like greek yogurt, you might want to thin it out a bit with milk or water.The jam: I chose Pear Ginger Jam to pair with the coconut milk, but any jam will work well.Add-ins: Mint and lime compliment the coconut and ginger spice and lend cooling flavors, making for a killer summer pop. Have fun with spices, herbs, zest or a splash of juice.
Ingredients
Pear Ginger Jam Popsicles:
- 1/2 cup Pear Ginger Jam
- 1 can coconut milk (13.5 oz), or two cups of base
- ½ Tablespoon mint, finely chopped
- 1 teaspoon lime zest
- Juice from half a lime
Instructions
- Whisk together all the ingredients in a large bowl, or combine in a blender for 30 seconds.
- Divide the mix evenly between about 4 popsicle molds. Freeze for 4 hours. Enjoy!
